  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 1/4 cup tomato paste
  • 4 cups beef broth
  • 1 tbsp light soy sauce
  • 2 tsp Worcestershire sauce
  • 1 tbsp dried herb seasoning (thyme, rosemary, basil, oregano)
  • 1 cup pearl barley (rinsed thoroughly)
  • 1/4 cup fresh coriander (chopped)

Instructions

Step 1: First, prepare the beef in batches. Drizzle the olive oil on a large soup pot placed on the stove over medium-high heat. Once the oil is hot enough, add half of the meat (400-500g)—season with salt & pepper, and sear for 3 minutes.

Then, flip & fry the other sides for a minute. Remove to a plate and cook the remaining meat similarly with 1 Tbsp oil. Keep the cooked meat aside for later.

Step 2: Heat 2 tablespoons of olive oil in the same pot. Add the crushed garlic & sauté until fragrant. Then put the chopped onions, carrots, & celery and stir cook for 4-5 minutes. Finally, stir in the tomato paste & cook for 1-2 minutes.

Step 3: Pour in the broth followed by the two sauces, dried herb seasoning, salt, pepper, and pre-cooked beef. Please wait until the liquid starts simmering, then turn down the heat to low, cover the pot, and let it cook for about an hour. Uncover and stir at regular intervals.

Step 4: Mix in the pearl barley. Cover and cook on low heat for 30 minutes until the meat and the barley become tender. Finally, garnish the beef barley soup with freshly chopped coriander leaves and enjoy warm!
