- 2 bay leaves
- 1⁄4 cup chopped Italian parsley
Instructions
Preheat oven to 325°F. Pat ribs completely dry and season generously with salt and pepper.
Heat oil in a large Dutch oven over medium-high heat. Sear ribs in batches until well browned on both sides, about 8 minutes per batch. Transfer ribs to a plate.
Add onion and garlic to pot. Cook for 5 minutes until softened. Add carrots, celery, and thyme. Cook 5 minutes more.
