1. Chicken Enchiladas Recipe


  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced

  • 8 (6 inch) corn tortillas
  • 1 cup shredded Mexican cheese blend

In a large skillet over medium heat, heat the olive oil. Add the onion and sauté for 5-7 minutes until soft and translucent. Add the garlic and sauté for 1 additional minute until fragrant.

Add the cooked shredded chicken and 1/2 cup of the enchilada sauce. Stir to coat the chicken evenly. Cook for 2-3 minutes until heated through. Turn off the heat.

Preheat the oven to 350°F. Lightly grease a 9×13 baking dish with nonstick cooking spray.
