1. Creamy Cajun Chicken Pasta Soup
Ingredients
- 1 lb boneless, skinless chicken breasts, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 4 cups chicken broth
- 1 cup heavy cream
- 8 oz elbow macaroni
- Salt and pepper to taste

Instructions
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes, until browned on all sides. Remove the chicken from the pot and set aside.
Add the onion, garlic, carrots and celery to the pot. Sauté for 5 minutes, until the vegetables begin to soften.
