1. Cucumber Avocado Salad Recipe
Ingredients
- 2 seedless cucumbers, sliced
- 2 avocados, diced
Dressing
- 2 tablespoons fresh lime juice
- 2 tablespoon olive oil
- 1-2 tablespoons chopped fresh cilantro (or parsley)
- 1/2 teaspoon salt and fresh cracked pepper
- 1/3 teaspoon red chili flakes
- 1/2 teaspoon cumin
- 1 clove garlic, minced (optional)
Instructions
To make the avocado cucumber salad: Combine all of the salad ingredients together in a salad bowl.
In a small mason jar, mix together the dressing ingredients to combine well, and pour over the avocado cucumber salad. Season with extra salt, if desired.
Serve the avocado cucumber salad immediately or chill in the refrigerator until serving. Enjoy!
