- 1 pound chicken livers
- 2 eggs
- ½ cup flour
- ½ cup Cornmeal
- 1 tsp salt
- 1 tsp ground pepper
- 2 cups canola oil
- 2 tablespoons milk

Rinse the chicken livers and trim off fat as needed
Beat the eggs with the milk until smooth and place in a shallow bowl. Combine the flour, cornmeal, and seasonings in another bowl. Coat the chicken livers in the egg mixture first, then roll in the flour mixture to coat. Shake off excess flour.
Preheat your cast iron pan with 2 cups canola oil to 360°F.
Carefully place livers into hot oil. Fry in small batches. Turn over when one side is brown. The liver should be done in 3-6 minutes depending on the size of the pieces and the quantity you have in the pan. Repeat for remaining pieces.
Serve the fried chicken livers with sweet Chili Sauce.
