Ingredients
- 4 walleye fillets
- 1 egg
- 2 cups crushed saltine crackers
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup oil
- 1 fresh lemon

Step 1:
In a shallow bowl, beat egg . In another bowl, combine the cracker crumbs, flour, salt and pepper.
Step 3:
Dip fillets into egg mixture, then coat with crumb mixture.
Step 4:
In a large skillet, heat oil. You put 4 fillets into the hot oil. Cook until browned, about 3 minutes per side, using tongs to turn the fillets. Transfer to a paper towel-lined plate and repeat with remaining fillets. Serve with fresh lemon wedges.
Tips:
To crush the crackers, place the crackers in a resealable gallon-size plastic freezer bag and roll with a rolling pin (or whatever you’ve got) until they are a fine “bread crumb” consistency.
