As the weather warms up, my mind often turns to the bright, fresh flavors of Greek cuisine. Light yet full of herbaceous vibrancy, these types of dishes feel like a welcome respite from heavy winter cooking. That’s why one of my favorite spring and summer recipes is Greek sheet pan chicken.

Baking everything together on one simple sheet pan lets the chicken and vegetables develop a gorgeous browning while still remaining tender-crisp. But the best part is the aromatic mixture of Greek seasonings that utterly transports me.

When roasted together, the chicken falls apart tender while soaking up the potent essence of oregano, lemon and garlic. Paired with crisp potatoes, tomatoes burst with their own summery essence. Each warm, aromatic bite feels like the Mediterranean seaside.

The best part? Almost no prep work beyond chopping and mixing before tossing everything onto the pan. Here is the easy, transporting recipe.

1. Greek Sheet Pan Chicken Recipe


  • 4 chicken breasts or thighs, bone in and skin on
  • 1 lb small potatoes, halved
  • 8 cloves garlic, minced
  • 1 tbsp dried oregano
  • Zest of 1 lemon
  • 1/4 cup olive oil
  • 1 pint cherry tomatoes
  • Salt and pepper


Preheat oven to 400°F. Toss potatoes, garlic, oregano, lemon zest and olive oil in a large bowl. Add chicken, tossing until well coated.

Spread mixture out onto a large sheet pan. Season with salt and pepper. Roast 45 minutes, stirring once, until chicken is cooked through and potatoes are browned.

Remove from oven, gently stir in cherry tomatoes, and roast 5 more minutes until burst. Enjoy while dreaming of bright Greek isles!
