This grinder salad recipe is one I’m sure you will want to make again and again. A salad version of the viral grinder sandwich, this salad is made with a delicious creamy dressing, crunchy lettuce, deli meat, and cheese.

1. Grinder Salad Recipe

Ingredients

Dressing

  • 3/4 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1 teaspoon minced garlic
  • 1/8 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon red pepper flakes (optional)

Salad

  • 1 head iceberg lettuce, chopped
  • 1/4 cup sliced red onion
  • 1 cup diced tomato
  • 1/2 cup pepperoncini
  • 1/2 cup diced provolone cheese
  • 1/2 cup chopped salami
  • 1/2 cup chopped deli turkey

Instructions

In a medium-sized bowl, whisk together the mayonnaise, red wine vinegar, minced garlic, Parmesan cheese, dried oregano, salt, black pepper, and red pepper flakes (if using). Set the dressing aside.

In a large salad bowl, combine the chopped iceberg lettuce, sliced red onion, diced tomato, pepperoncini, diced provolone cheese, chopped salami, and chopped deli turkey.

Drizzle the prepared dressing over the salad and toss gently to ensure all the ingredients are evenly coated.

Allow the salad to sit for a few minutes, allowing the flavors to meld and the dressing to lightly coat the vegetables.

Serve the Grinder Salad chilled or at room temperature, ensuring each bite is a perfect balance of crunchy greens, savory meats, tangy peppers, and creamy cheese.

This chopped salad is great on it’s own but you can also serve alongside things like garlic bread, chicken wings, or buttered noodles.

Substitutions & Additions

Meat – Use your favorite grinder sandwich sliced deli meat like salami, turkey, ham, pepperoni, roast beef, or capicola.

Cheese – You can substitute provolone with cheeses like mozzarella, colby jack, monterey jack, cheddar cheese, swiss cheese, or others.

Vegetables – Try adding in more vegetables like diced cucumber, carrots, and bell peppers.

Some Tips For You

If you would like to make this into a grinder salad sandwich, toast a hoagie roll and spoon the salad mixture onto the rolls.

Don’t like spicy food, leave out the red pepper flakes.

I like to try and chop all of the ingredients into smaller pieces to make it easier to eat.

If you won’t be serving this immediately, store the dressing separately from the salad and then toss together when ready to eat.

You can store the leftover salad in an airtight container in the refrigerator for 1-2 days. If the salad is covered in dressing, it will only last 1-2 days before it becomes soggy. This does not freeze well.
