1. How To Cook Bamboo Shoots
- 1 pound fresh and young bamboo shoots, peeled and sliced
- 2 tablespoons vegetable oil

- 2 carrots, julienned
- 1 red bell pepper, sliced
- 4 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Rinse the bamboo shoots under running water. Peel off the outer layers using a vegetable peeler or paring knife until you reach the tender inner shoot. Slice the shoots into 1/4 inch pieces.
If using canned bamboo shoots, boil for 2-3 minutes to reduce tin flavor before adding to the stir-fry.
Heat vegetable oil in a wok or large skillet over medium-high heat. Add the onion and stir-fry for 1 minute.
Add the bamboo shoots and continue to stir-fry for 2-3 minutes.
Add the carrots, bell pepper, mushrooms, garlic, and ginger. Stir-fry for another 2-3 minutes.
