  • 1⁄4 cup olive oil
  • 1⁄4 cup lime or lemon juice
  • 4 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Lime wedges for serving

In a bowl or resealable bag, combine the olive oil, citrus juice, garlic, chili powder, cumin and salt. Add the steak and turn to coat evenly. Marinate for at least 30 minutes up to overnight.

Heat 1 tsp oil in a large skillet over medium-high heat. Remove steak from marinade and pat dry with paper towels.

Add steak to skillet and cook for 4-6 minutes per side, until charred and internal temperature reaches 145°F for medium-rare doneness.

  • 1/2 cup olive oil
  • 1/4 cup lime juice (about 2-3 limes)
  • 3 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Make the marinade: In a large resealable bag or shallow dish, combine the olive oil, lime juice, garlic, chili powder, cumin, oregano, salt, and pepper. Mix well.

Add the flank or skirt steak to the marinade, making sure the meat is fully coated. Cover and refrigerate for at least 2 hours, or up to 24 hours.
