Having an extra jug or carton of milk on hand doesn’t have to mean waste. Freezing milk can extend the shelf life for several months. However, the freezing process does impact milk’s texture and flavor. Understanding the dos and don’ts of freezing milk ensures safe, best quality results.

1. Can Milk Be Frozen?

Milk can be frozen, but it may undergo some textural changes in the process. As the water in milk freezes and forms ice crystals, it can slightly separate the milk fat and solids. This results in a grainier, drier and chalkier texture when thawed. However, the nutritional value remains stable and it is safe for consumption.

2. What Type of Milk Freezes Best?

The higher fat content of whole milk makes it the best candidate for freezing compared to low fat or skim varieties. The extra fat helps minimize separation and maintains a creamy, smooth texture better. Buttermilk and non-dairy milks like almond milk generally don’t hold up well to freezing. Plain cow’s milk freezes best.

3. How To Freeze Milk

  • Make sure milk is not past the sell-by date before freezing. Fresh milk freezes best.
  • Pour milk into freezable plastic containers or bags, leaving about 1 inch of headspace.
  • Seal containers tightly. Remove as much air as possible if using bags.
  • Label bags or containers with the type and date of milk and freeze-by date.
  • Lay containers flat in the coldest part of the freezer to freeze rapidly.
  • For small amounts, freeze milk in ice cube trays, then store cubes in bags.
  • Frozen milk will maintain best quality for 3-6 months.

4. Thawing and Using Frozen Milk

  • Thaw frozen milk in the refrigerator overnight before use. Do not thaw at room temperature.
  • Give milk a good shake or stir once thawed and before consuming.
  • Use thawed milk for cooking, baked goods or milkshakes. The texture works better in these applications.
  • Do not refreeze previously frozen milk.

While not quite the same as fresh, frozen milk can be used for drinking, cereal, or in recipes. Just don’t expect ice cream-smooth pours straight from the freezer. For kids who guzzle milk, freezing extras ensures you don’t run out. Freezing is also great when milk is on sale or nearing expiration.
