Sour cream is a popular cultured dairy product used in many recipes like dips, baked goods, topping for baked potatoes, and more. It has a cool, tangy flavor from lactic acid producing bacteria. An opened carton of sour cream only lasts about 2-3 weeks in the fridge. To extend its shelf life, many people wonder if you can freeze sour cream.

1. How Well Does Sour Cream Freeze?

Sour cream can be frozen, but there are some downsides. The freezing process leads to separation of the fat, liquid, and solids. This results in a grainier, clumpy texture when thawed. The moisture loss also makes it more difficult to spread after freezing.

However, frozen sour cream still retains its distinctive tangy flavor. It just may not have the same smooth, creamy consistency, especially if frozen for longer periods. For use in cooking and baking, frozen sour cream works well. But it isn’t ideal for topping baked potatoes or tacos where texture is important.

2. How To Freeze Sour Cream

To freeze sour cream properly

  • Make sure the sour cream is fresh and the container is tightly sealed. Do not freeze sour cream that has been opened.
  • Portion sour cream into a freezer-safe container, allowing 1⁄2 inch headspace. Or place dollops on a parchment lined baking sheet and freeze individually.
  • Seal the container and remove as much air as possible if using a plastic bag.
  • Label package with quantity and freeze-by date (about 2 months).
  • Place in freezer until completely frozen, then transfer to a resealable freezer bag if desired.

3. Thawing and Using Frozen Sour Cream

  • Thaw frozen sour cream overnight in the refrigerator. Do not thaw at room temperature.
  • Once thawed, beat with a whisk or spoon until creamy and smooth. This helps re-emulsify some of the separated fats.
  • Use thawed sour cream for cooking, baking casseroles, or mixing into dips.
  • Consume fully thawed sour cream within about one week. Do not refreeze.

While not exactly the same as fresh, properly frozen sour cream can be used in a pinch. Thaw it fully, give it a good whip or blend, and utilize it in your next recipe needing a little tang.
