1. Instant Pot Sweet Potatoes
Ingredients
- 4 small or 2 large scrubbed whole sweet potatoes
- 1⁄2 cup water
- 3 tablespoons butter, cut into pieces
- 2 tablespoons brown sugar
- 2 tablespoons maple syrup
- 1 tablespoon orange juice
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- Dash of cloves
Instructions
Pour the water into the Instant Pot inner pot. Place steamer basket inside, creating a trivet. Gently place whole sweet potatoes into basket.
In a bowl, stir together butter, brown sugar, maple syrup, orange juice, salt and spices. Pour mixture evenly over potatoes.
Secure the Instant Pot lid and set valve to ‘sealing’ position. Select ‘Steam’ setting and set cook time to 15 minutes for small or 20 minutes for large potatoes.
Once cooking completes, quick release pressure by turning valve to ‘venting.’ Wait until fully depressurized then and remove lid.
Carefully transfer potatoes to serving plates. Spoon over any sauce left behind in pot basket.
Make a slit across the top to open (fluff up the insides with a fork) or cut in half. Sweet orange flesh should pull apart easily when fully cooked.
Add additional butter, cinnamon or maple syrup over the opened sweet potatoes if desired.
