1. Jalapeno Popper Grilled Cheese Recipe

Ingredients

  • 8 slices of bread (your choice)
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 3-4 jalapeno peppers, halved and seeds removed
  • 2 tablespoons olive oil
  • 2 tablespoons butter, softened

Instructions

Preheat your oven to 400°F (200°C).

Place the halved and seeded jalapeno peppers on a baking sheet. Drizzle them with the olive oil and toss to coat.

Roast the jalapeno peppers in the preheated oven for 15-20 minutes, or until they are charred and softened. Remove them from the oven and let them cool slightly.

Once the roasted jalapeno peppers are cool enough to handle, finely chop them.

In a medium-sized bowl, combine the softened cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, and the chopped roasted jalapeno peppers. Mix until well blended.

Spread the cheese and jalapeno mixture evenly onto 4 slices of bread.

Top each of the cheese-topped bread slices with another slice of bread to create 4 sandwich halves.

Spread the softened butter onto the outside of each sandwich half.

Heat a large skillet or griddle over medium heat.

Place the sandwich halves, butter-side down, onto the preheated skillet or griddle.

Cook the sandwiches for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
