Ingredients

  • 1 yellow onion (2 cups diced)

  • 2 cans (14.5/15 oz each) white beans (like cannellini), drained and rinsed
  • 1 Parmesan cheese rind (optional)
  • 1/2 cup freshly grated Parmesan cheese, for topping
  • Fresh rosemary and/or parsley, for topping

Instructions

In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.

Add the minced garlic and sauté for 1 minute until fragrant.

Stir in the Italian seasoning, salt, and pepper.

Pour in the broth and add the drained and rinsed white beans. If using, add the Parmesan cheese rind.

Bring the soup to a simmer and let it cook for 15-20 minutes, until the vegetables are very tender.

Remove the Parmesan rind (if used). Use a potato masher or immersion blender to lightly mash some of the beans, thickening the soup.

Taste and adjust seasoning as needed, adding more salt, pepper, or Italian seasoning to your taste.
