These vibrant and refreshing Pineapple Breakfast Bowls make a beautiful and nutritious start to the day. The natural sweetness of the pineapple pairs wonderfully with the tanginess of the yogurt and the burst of fresh berries.

They perfect for breakfast, brunch, or a healthy snack and can be prepared in advance and kept chilled until ready to serve.

1. Pineapple Breakfast Bowls

Ingredients

  • 1 small pineapple
  • 1 cup Greek yogurt or coconut yogurt
  • 1/2 cup fresh blueberries
  • 1/2 cup diced strawberries
  • 1/2 cup sliced gooseberries or raspberries
  • 2 tsp hemp seeds, chia seeds, or poppy seeds (optional)

Instructions

Slice the pineapple in half lengthwise and scoop out the flesh, leaving about 1/2-inch thickness on the pineapple halves to create “bowls”.

Dice the scooped out pineapple flesh into bite-sized pieces.

In a medium bowl, combine the diced pineapple, Greek or coconut yogurt, blueberries, strawberries, and gooseberries or raspberries. Stir gently to mix.

Spoon the fruit and yogurt mixture evenly into the reserved pineapple halves.

Sprinkle the optional hemp seeds, chia seeds, or poppy seeds over the top of the filled pineapple bowls.

Serve the Pineapple Breakfast Bowls immediately or chill in the refrigerator until ready to enjoy.

Feel free to substitute any of the berries with your favorite seasonal fruits. The seeds add a nice crunch and boost of protein, fiber, and healthy fats, but they are optional.
