When you want a show-stopping main course for friends and family, this Roasted Beef Tenderloin is always a winner! The trick is to cook it low and slow in the oven, then sear it in a skillet for that irresistible finish. The result is a beautiful brown crust on the outside while the inside stays melt-in-your-mouth tender.

1. Roasted Beef Tenderloin Recipe

Ingredients

  • 3-4 lb whole beef tenderloin (filet mignon), trimmed and tied
  • 3 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 1 tablespoon coarsely ground black pepper
  • 1 tablespoon minced fresh rosemary
  • 1 tablespoon minced fresh thyme
  • 4 cloves garlic, minced
  • 1/2 teaspoon smoked paprika

Instructions

Step 1: Prepare the Beef Tenderloin

Preheat your oven to 275°F (135°C).

Pat the beef tenderloin dry with paper towels and place it on a rimmed baking sheet or in a large oven-safe skillet.

In a small bowl, combine the olive oil, kosher salt, black pepper, rosemary, thyme, garlic, and smoked paprika. Mix well to create a seasoning paste.

Rub the seasoning paste evenly over the entire surface of the beef tenderloin, ensuring it’s well coated.

Step 2: Slow Roast the Beef

Place the seasoned beef tenderloin in the preheated oven and roast it for approximately 2 to 2 1/2 hours, or until it reaches your desired level of doneness.

Use a meat thermometer to monitor the internal temperature. For rare, aim for 120°F (49°C), for medium-rare, 125°F (52°C), and for medium, 130°F (54°C).

The slow roasting process will result in a perfectly cooked, tender, and juicy beef tenderloin.

Step 3: Sear the Beef

Once the beef tenderloin has reached your desired doneness, remove it from the oven and set aside

Heat a large cast-iron skillet or heavy-bottomed pan over high heat. Add a tablespoon of olive oil to the pan.

Carefully place the rested beef tenderloin in the hot pan and sear it on all sides, about 1-2 minutes per side, until a beautiful caramelized crust forms.

Step 4: Slice and Serve

Remove the beef tenderloin from the pan and transfer to a cutting board then tent with aluminum foil. Allow to rest for at least 20 minutes before carving. (This helps to keep the juices in the meat rather than on your cutting board.

Using a sharp knife, slice the beef tenderloin into thick, even slices, approximately 1-inch thick.

Arrange the sliced beef tenderloin on a serving platter and serve immediately, accompanied by your choice of sides, such as roasted vegetables or a fresh salad.

The next time you’re celebrating or simply want to treat your loved ones, Oven Roasted Beef Tenderloin is one dish they’ll be talking about for years to come. It’s perfect for any special occasion but won’t require you to spend tons of hands-on time in the kitchen. (Although no one will ever be able to tell!)
