  • 1/2 medium pineapple, peeled, cored and cut into bite-sized chunks
  • 2 tbsp fresh lime juice
  • 1 tbsp sesame seeds
  • A small bunch of fresh cilantro, chopped

Instructions

Preheat your oven to 400°F. Line a large sheet pan with parchment paper.

In a large bowl, combine the chicken tenderloins, chili powder, cumin, minced garlic, and a generous pinch each of salt and pepper. Toss to coat the chicken evenly.

Add the melted coconut oil to the bowl and mix again until the chicken is fully coated.
