And when that soup is bursting with the flavors of succulent shrimp, sweet corn, and a rich, creamy broth, it becomes an irresistible culinary experience. Introducing the Shrimp and Corn Soup – a recipe that will have you coming back for seconds and thirds.

1. Shrimp & Corn Soup Recipe

Ingredients

  • 4 tablespoons butter
  • 1/2 cup celery, chopped
  • 4 green onions, sliced (white and green parts separated)
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy whipping cream
  • 1 (15-ounce) can cream-style corn
  • 1 1/2 cups corn kernels, fresh or frozen
  • 1 pound shrimp, peeled, deveined, and uncooked
  • 2 teaspoons Old Bay seasoning, plus more to taste

Instructions

In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped celery and the white parts of the green onions, and sauté for 3-5 minutes, until the vegetables are softened.

Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Sprinkle the all-purpose flour over the vegetables and stir to coat. Cook for 2-3 minutes, stirring constantly, to create a roux.

Slowly pour in the whole milk and heavy cream, whisking continuously to prevent any lumps from forming. Bring the mixture to a simmer and let it cook for 5-7 minutes, or until the soup has thickened slightly.

Add the canned cream-style corn, corn kernels, and the uncooked shrimp to the pot. Season with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 2 teaspoons of Old Bay seasoning. Stir to combine.

Let the soup simmer for 10-15 minutes, or until the shrimp are cooked through and the corn is tender.

Taste and adjust seasoning with additional salt, pepper, and Old Bay seasoning as needed.

Just before serving, stir in the sliced green parts of the green onions.

Ladle the Shrimp and Corn Soup into bowls and enjoy its creamy, comforting goodness. The combination of tender shrimp, sweet corn, and a rich, flavorful broth makes this soup a true delight for the senses. Serve it with crusty bread or crackers for a satisfying and nourishing meal.
