This smoked sausage and sweet potato stir-fry is a perfect weeknight dinner idea! Pop up this skillet dinner skillet full of delicious goodness with smoked sausage, sweet potatoes, onion, and bell peppers. Sweet potatoes are quickly sauteed then paired with savory sausage and sweet bell peppers for a spicy/savory touch. Everything in this smoked sausage recipe is cooked in one pan with only 15 minutes of prep, and easy clean-up.

1. Smoked Sausage with Sweet Potatoes and Crispy Fried Onions

Ingredients

  • 1 1/2 lb (650g) sweet potatoes, peeled and petite diced
  • 1 onion, minced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 package smoked sausage, sliced
  • 4 tablespoons olive oil (or butter, or ghee)
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red chili pepper flakes, or to taste
  • 1/2 teaspoon minced garlic
  • 1/4 cup (60ml) low-sodium chicken stock (or beef, vegetable…)
  • 1 teaspoon hot sauce of your choice (we used Sriracha)
  • Salt and fresh cracked pepper
  • 4 scallion stalks, chopped
  • Chopped parsley, for garnish

Instructions

To make the smoked sausage and sweet potatoes recipe: In a large cast-iron skillet, heat 3 tablespoons oil over medium heat. Add the diced sweet potatoes to the pan and season with salt and pepper. Saute until golden and cooked through, about 10 minutes, stirring regularly. Transfer sweet potatoes to a plate and set aside.

In the same skillet with the remaining tablespoon oil, brown the sliced smoked sausage on all sides for around 5-7 minutes over medium heat and set aside.

Add bell pepper and stir-fry until crisp-tender, about 2 minutes. Set aside.

Still in the same pan, add garlic, onion, and season with red pepper flakes, Italian seasoning, salt, and pepper. Stir-fry until onions are translucent then deglaze with 1/4 cup stock, then stir in the hot sauce.

Add the sauteed sweet potatoes, bell peppers, scallion, and sausage back to the skillet and mix everything together. Cook for 2 to 3 minutes more, and stir well to coat the smoked sausage and veggies with the sauce.

Adjust seasoning if needed, garnish with chopped fresh parsley and serve the smoked sausage and sweet potatoes. Enjoy!

Well, this sausage and sweet potato recipe is already a one-pan meal on its own, but nothing prevents you from serving it with a side of cauliflower rice, zoodles, or couscous if you like.
