1. Taco Soup Recipe
Ingredients
- 1 lb lean ground beef
- 1 tbsp oil for sautéing

- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 1/2 cups diced tomatoes
- 16 oz canned beans, drained (kidney or pinto)
- 1 cup corn
- 3 garlic cloves, minced
- 2 cups beef or chicken broth
- 1 packet taco seasoning or 3 tbsp homemade taco seasoning
Instructions
In a large pot or Dutch oven, heat the 1 tbsp of oil over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until it is browned and cooked through, about 5-7 minutes. Drain any excess fat.
Add the diced onion, red bell pepper, and green bell pepper to the pot. Sauté for 3-4 minutes, until the vegetables have softened.
Stir in the minced garlic and cook for 1 minute, until fragrant.
Add the diced tomatoes, drained beans, corn, beef or chicken broth, and taco seasoning. Stir to combine.
