Eye of round steak is a type of beef cut from the rear of the cattle. It is a very lean cut that lacks fat marbling but is low in calories. Due to its leanness, eye of round steak can easily become tough and dry if overcooked.

However, when cooked properly using the right cooking method, eye of round steak can be tender and delicious. Here are two methods for cooking eye of round steak – on the stove and in an Instant Pot with gravy.

1. How To Cook Eye of Round Steak on Stove

  • 1 lb eye of round steak
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp olive oil

Tools Needed

  • 1 skillet
  • 1 meat thermometer
  • 1 plate
  • Aluminum foil

Season the Steak

Pat the steak dry with a paper towel. Generously season both sides with salt and pepper, pressing it gently into the meat. Let it sit at room temperature for 20 minutes before cooking.

Heat the Skillet

Place the skillet over medium-high heat. Drizzle in the olive oil and heat until shimmering. The skillet should be hot before adding the steak.

Sear the Steak

Gently lay the steak in the skillet. Let it cook undisturbed for 3-4 minutes per side, without moving, until a brown crust forms. This sears in the juices.

Reduce Heat and Cook

Once seared, reduce heat to medium. Continue cooking for 8-12 minutes total, depending on thickness, flipping every 2-3 minutes. Use a meat thermometer to check temperature – it’s ready at 130-135°F for medium-rare.

Tent with Foil and Rest

Transfer the cooked steak to a plate and tent loosely with foil. Let it rest for 10 minutes before slicing or serving. This allows the internal temperature to rise to the perfect doneness.

Slice and Serve

Slice the rested steak against the grain. Serve slices hot off the skillet for maximum tenderness and juiciness. Enjoy your eye of round steak!

2. How To Cook Eye of Round Steak in Instant Pot With Gravy

  • 1 lb eye of round steak
  • 1 tsp oil
  • 3 tbsp flour
  • 1 cup beef broth
  • 1 cup water
  • 1/4 tsp salt
  • 1/8 tsp pepper

Season Steak

Pat steak dry and season with salt and pepper on both sides.

Browning (optional)

Press Sauté and heat oil in pot. Brown steak 2-3 minutes per side until lightly seared. Remove and set aside.

Make Gravy

Add more oil if needed. Sprinkle in flour and cook 3 minutes until fragrant, stirring constantly.

Add Liquids

Whisk in broth and water until no lumps remain. Then add 1⁄4 tsp salt and 1/8 tsp pepper.

Pressure Cook

Return steak to liquid or add unbrowned steak. Secure lid and set pressure release to sealing. Select meat function and set 20 minutes.

Release Pressure

Let pressure release naturally for 10 minutes. Quick release remaining steam. Remove steak to warm plate.

Finish Gravy

Select Sauté and whisk gravy until thickened, about 5 minutes. Taste and season more if needed.

Slice steak against the grain. Serve slices topped with hot gravy or on the side for dipping. Enjoy!

By following these step-by-step instructions, you can create tender and flavorful steak dishes that will leave your taste buds satisfied. For a comforting weeknight meal or easy company special, eye of round steak is a great choice.
