Pat the barramundi fillets dry thoroughly with paper towels. Season both sides with salt and pepper.
Melt 2 tablespoons butter in a large nonstick skillet over medium-high heat. When the foaming subsides, add the fish fillets and cook for 4 minutes until golden brown. Flip the fillets and cook 2-3 minutes more until just cooked through. Transfer to a plate and cover to keep warm.

2. Baked Barramundi Fillets With Asian Glaze
Ingredients
- 4 barramundi fillets
- 1⁄2 cup orange marmalade
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon red chili flakes
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 2 tablespoons vegetable oil
- Chopped green onions, sesame seeds, and lime wedges for serving
Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper. Rinse barramundi fillets and pat very dry with paper towels. Arrange in a single layer on prepared baking sheet.
In a small bowl, whisk together marmalade, soy sauce, honey, red chili flakes, garlic, and ginger.
Brush fish evenly on both sides with vegetable oil. Spoon glaze evenly over the fillets.

Ingredients

- 1 lemongrass stalk, trimmed and minced
- 3 garlic cloves, minced
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon vegetable oil
- Lime wedges and lettuce for serving
Instructions
In a shallow dish, combine lemongrass, garlic, fish sauce, brown sugar, and oil. Add barramundi fillets and turn to coat. Let marinate 15 minutes, flipping halfway through.
Preheat air fryer to 380°F. Lightly grease air fryer basket with oil.
Place fillets in air fryer basket in a single layer, meaty sides down. Reserve marinade.
Cook for 5 minutes then flip and cook 5 minutes more until fish flakes easily and reaches 145°F.
Transfer barramundi to serving plates. Stir reserved marinade and spoon over fillets. Serve with lime wedges and lettuce
