1. Carrot Apple Salad Recipe

Ingredients

  • 1 red delicious apple, diced
  • 1 granny smith apple, diced
  • 2 tbsp lemon juice
  • 2 cups matchstick carrots
  • 1/4 cup yellow onion, finely diced
  • 1/3 cup dried sweetened cranberries
  • 1/2 cup vanilla yogurt
  • 1/4 cup mayonnaise
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup canned mandarin orange segments, drained

Instructions

In a large bowl, toss the diced red delicious and granny smith apples with the lemon juice to prevent browning.

Add the matchstick carrots, diced yellow onion, and dried cranberries. Stir to combine.

In a small bowl, whisk together the vanilla yogurt, mayonnaise, sugar, salt, and pepper until well blended.
