Yogurt is a refrigerated staple packed with probiotics, protein, and bone-strengthening calcium. The live active cultures that provide the health benefits also make yogurt highly perishable. An open container only lasts 1-2 weeks. Freezing can prolong yogurt’s shelf life, but does it maintain proper texture and taste?

1. How Well Does Yogurt Freeze?

Plain yogurt freezes fairly well compared to other dairy products. When frozen slowly and properly, it remains thick and creamy when thawed. However, the live cultures do not survive freezing temperatures. So frozen yogurt loses some of its unique probiotic benefits. The taste becomes more tart and acidic due to separation of the whey.

Fruit flavored and Greek yogurt also freeze decently thanks to their higher solids content and added sugars. But the fruit tends to crystallize and become watery. The higher protein content of Greek yogurt makes it the optimal choice for freezing. Overall, frozen yogurt is better used for cooking versus eating straight.

2. How To Freeze Yogurt

To freeze yogurt successfully

  • Make sure yogurt is not expired and containers are sealed tightly. Do not freeze already opened yogurt.
  • Mix in a sprinkle of cornstarch per cup of yogurt. This prevents excessive wateriness when thawed.
  • Portion into freezer-safe containers or bags, leaving 1/2 inch headspace. Flatten bags to remove air.
  • Seal tightly and label with type of yogurt and date.
  • Freeze yogurt up to 2-3 months for best texture.

3. Thawing and Using Frozen Yogurt

  • Thaw frozen yogurt overnight in the refrigerator. Do not thaw at room temperature.
  • Stir thoroughly before use to evenly distribute moisture that may have separated.
  • Use thawed yogurt within 3-4 days. The probiotics will no longer be active.
  • Add thawed yogurt to smoothies, baked goods, sauces, and desserts like frozen yogurt pops.

While frozen yogurt loses some of its characteristic creaminess, it retains its tangy flavor. Freezing gives you an easy way to prevent waste and always have a nutritious dairy staple on hand for recipes.
