  • 1 1⁄2 cups chicken or vegetable broth
  • 1⁄4 cup freshly grated Parmesan, plus more for serving
  • Red pepper flakes to taste (optional)
  • Salt and pepper


Bring a large skillet with broth to a boil over high heat. Add pasta and reduce heat to medium-high. Cook for 6-8 minutes, stirring occasionally, until pasta is almost al dente.

Meanwhile, heat olive oil in a medium skillet over medium-high. Add mushrooms and sauté 5 minutes until browned. Add garlic and cook 1 more minute.

Once pasta is almost done, add mushroom mixture and spinach to pasta skillet. Continue cooking 2-3 more minutes, stirring frequently, until pasta is tender and liquid is absorbed.

Remove from heat and stir in Parmesan cheese. Season with salt, pepper, and red pepper flakes to taste.

Serve immediately topped with more Parmesan cheese. Enjoy!

The whole process comes together faster than it would take me to boil water for a separate pot of pasta.
