1. How To Cook Pattypan Squash in Oven

Ingredients

  • 3 pattypan squash, sliced in half lengthwise and seeds removed
  • 2 tablespoons olive oil
  • 1⁄4 teaspoon garlic powder
  • 1⁄4 teaspoon onion powder
  • Salt and pepper

Instructions

Preheat your oven to 400°F. Line a baking sheet with parchment paper.

Brush the cut side of the pattypan halves with olive oil and sprinkle with garlic powder, onion powder, salt, and pepper.

Place squash cut-side down on the baking sheet. Roast for 15 minutes.

Remove baking sheet and carefully flip the pattypan halves over. Roast for another 10-15 minutes until fork tender.

Allow to slightly cool before serving. Season with additional salt and pepper if desired.

The pattypan can also be cut into wedges instead of halves when roasting, which reduces cooking time. You can also top it with grated parmesan before roasting for a baked Parmesan pattypan dish.

2. How To Cook Pattypan Squash in Air Fryer

Ingredients

  • 1 pattypan squash, sliced into 1⁄2 inch rounds
  • 1 tablespoon olive oil
  • 1⁄2 teaspoon Italian seasoning
  • 1⁄4 cup panko breadcrumbs
  • 2 tablespoons grated Parmesan (optional)
  • Salt and pepper

Instructions

Slice off the top and bottom of the squash, then cut it crosswise into 1⁄2 inch slices.

Drizzle the olive oil over the squash slices on a baking sheet and turn them over to coat both sides. Season all over with Italian seasoning, salt, and pepper.

Bake in air fryer at 400°F for 5 minutes, flip squash and bake 4 more minutes.

Remove from fryer and top rounds with panko breadcrumbs and Parmesan cheese if desired. Return to fryer for 3-5 minutes until breadcrumbs brown.

Serve immediately. The pattypan will be caramelized on the outside while still being soft on the inside.

3. How To Cook Pattypan Squash on Grill

Ingredients

  • 3 small pattypan squash, halved and seeded
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juice and zest
  • 1⁄4 teaspoon chili powder
  • 1⁄4 cup crumbled feta cheese
  • Fresh parsley, chopped

Instructions

Heat your grill to high heat. Brush both sides of the squash halves with olive oil.

Grill the squash halves cut-side down for 2-3 minutes until char lines appear.

Turn the halves over and grill for another 5 minutes until fork tender but still holding their shape.

Transfer to a plate and sprinkle the minced garlic all over the top of each half along with the lemon zest, lemon juice, chili powder and crumbled feta.

Garnish with chopped parsley. Serve immediately.
